Cold stable. Fermentation Macerated 10-21 days with skins, fermented at 28-30 C with regular maceration. Free-run wine only collected, all pressings separated. Winemaker s tasting note Rich inky colour. Dark pulm, toasty oak and vanilla aromas. Complex palate with meaty, dark fruti and oak flavours. Round and fleshy but with robust tannings for ageing. Winemaker s serving suggestion Beef bourguignon, roast duck, bacon, sandwiches.
